做法(fǎ ):洗净宰好鲫鱼,洗(xǐ )净淮(huái )山和(hé )薏米。用清水把(bǎ )陈皮泡软(ruǎn ),拍裂一(yī )小(xiǎo )块姜,热锅,用姜块在(zài )锅(guō )上(shàng )擦一遍,放两勺(sháo )油,待油六成(chéng )热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和其他材料,武火煮(zhǔ )沸,转中小火煲一个半小时,下(xià )盐调味即可品尝。 -
