做法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到(dào )水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上(shàng )锅盖焖(mèn )。 -
