做(zuò )法(fǎ ):春(chūn )笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入(rù )少量(liàng )清水半掩住(zhù )春笋,盖上(shàng )锅盖大(dà )火煮开后(hòu )转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。 -
