做法(fǎ ):洗净宰好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热锅(guō ),用姜块(kuài )在锅上擦一遍,放两勺(sháo )油,待油六成(chéng )热下鱼,煎(jiān )至(zhì )微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放入煎(jiān )煮好的鲫(jì )鱼和其他材(cái )料,武火煮沸,转中小火煲一个半(bàn )小时,下盐调味即可品(pǐn )尝。 -
