做(zuò )法:洗(xǐ )净宰好鲫鱼,洗(xǐ )净淮(huái )山和薏米。用清水把陈皮泡(pào )软,拍裂一小(xiǎo )块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油(yóu )六成(chéng )热下鱼,煎至(zhì )微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好(hǎo )的鲫(jì )鱼和其他(tā )材(cái )料,武火煮沸,转中小火(huǒ )煲一(yī )个半小时,下盐调味即可品尝。 -
