做法:洗(xǐ )净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清(qīng )水把陈皮泡软,拍裂一小块姜,热(rè )锅,用(yòng )姜块在(zài )锅上(shàng )擦(cā )一遍,放两勺油,待油六成热(rè )下鱼,煎至(zhì )微黄。煮沸瓦煲里的清(qīng )水,放入煎煮(zhǔ )好的鲫鱼和(hé )其他材料,武火煮(zhǔ )沸(fèi ),转中小火煲一个半小时(shí ),下(xià )盐调味即可品尝。 -
