做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂一(yī )小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦(cā )一遍(biàn ),放两勺油,待油六成热下鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其(qí )他材料(liào ),武火煮沸,转中(zhōng )小火煲一个半(bàn )小时,下盐调味即(jí )可品(pǐn )尝(cháng )。 -
