做(zuò )法(fǎ ):春笋切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火(huǒ )煮开(kāi )后转(zhuǎn )中火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。 -
